Land:
Everything is covered with snow and frost. The ploughed soil is purposely exposed to the cold, allowing it to become softer and easily workable. The cold temperature will also eliminate any parasites or unwanted insects.
Looking barely alive, the vines lie still.
Hoiwever, the ground protects the plants’ deep roots, keeping them warm and safe in a motherly embrace.

Cellar:
The wines begin to “take shape”, evolving to show the signs of their true quality.
The cold helps them to naturally reach a good balance.
